  • pasta (penne or rigatoni)400g
  • large bell peppers (red and yellow)2
  • ricotta cheese250g
  • cloves garlic, minced3
  • tablespoons olive oil2
  • Salt and black pepper to taste
  • Fresh basil leaves
  • grated Parmesan cheese50g
  • teaspoon red pepper flakes (optional)1/4

Preparation

How to cook.

Prep 15 minutes Cook 25 minutes 4 servings
  1. Roast peppers directly over flame or under broiler until charred all over
  2. Place in a bowl, cover with plastic wrap and let steam for 10 minutes
  3. Peel, deseed and cut peppers into strips
  4. Cook pasta according to package directions until al dente
  5. In a large pan, heat olive oil and sauté garlic until fragrant
  6. Add pepper strips and cook for 2-3 minutes
  7. Reserve 1 cup pasta water before draining
  8. Add drained pasta to the pan with peppers
  9. Remove from heat and add ricotta, mixing gently
  10. Add pasta water gradually to achieve creamy consistency
  11. Season with salt, pepper and red pepper flakes
  12. Serve topped with Parmesan and fresh basil
  1. Place peppers cut in pieces in Varoma, cook 20 min/Varoma/speed 1 with 500ml water in bowl
  2. Remove peppers, peel and cut into strips. Empty bowl
  3. Add 1000ml water, heat 7 min/100°C/speed 1
  4. Add pasta through hole in lid, cook time according to package/100°C/reverse/speed 1
  5. Reserve 200ml cooking water, drain pasta and set aside
  6. Without washing bowl, add oil and garlic, cook 2 min/100°C/speed 1
  7. Add pepper strips, cook 3 min/100°C/reverse/speed 1
  8. Add pasta, ricotta and 100ml reserved water
  9. Mix 30 sec/reverse/speed 2, adding more water if needed
  10. Season and serve with Parmesan and basil
