Mediterranean Quinoa Bowl with Roasted Chickpeas and Almond Crunch

  • cup quinoa1
  • cups vegetable broth2
  • can (15 oz) chickpeas, drained and rinsed1
  • cup sliced almonds1/2
  • tablespoons olive oil2
  • teaspoon smoked paprika1
  • teaspoon cumin1/2
  • teaspoon garlic powder1/2
  • cup fresh parsley, chopped1/4
  • tablespoons lemon juice2
  • Salt and pepper to taste

Preparation

How to cook.

Prep 15 minutes Cook 30 minutes 4 servings
  1. Preheat oven to 400°F (200°C)
  2. Pat chickpeas dry with paper towels and toss with 1 tablespoon olive oil, paprika, cumin, garlic powder, salt and pepper
  3. Spread chickpeas on a baking sheet and roast for 20-25 minutes until crispy
  4. Meanwhile, rinse quinoa under cold water
  5. In a saucepan, bring vegetable broth to a boil, add quinoa, reduce heat and simmer covered for 15 minutes
  6. Remove from heat and let stand 5 minutes, then fluff with a fork
  7. Toast almonds in a dry pan over medium heat for 3-4 minutes until golden
  8. Mix cooked quinoa with remaining olive oil, lemon juice and parsley
  9. Serve quinoa topped with roasted chickpeas and toasted almonds
  1. Add almonds to mixing bowl, chop 3 seconds/Speed 5, set aside
  2. Add quinoa to mixing bowl with 2 cups vegetable broth, cook 15 minutes/212°F/Speed 1
  3. Transfer quinoa to a serving bowl, clean mixing bowl
  4. Preheat oven to 400°F (200°C)
  5. In a separate bowl, toss chickpeas with olive oil and spices
  6. Roast chickpeas in oven for 20-25 minutes
  7. Add parsley to mixing bowl, chop 3 seconds/Speed 7
  8. Mix quinoa with olive oil, lemon juice and chopped parsley
  9. Serve quinoa topped with roasted chickpeas and chopped almonds

Tips.

  1. Make sure chickpeas are completely dry before roasting for maximum crispiness
  2. Toast the quinoa in a dry pan before cooking for a nuttier flavor
  3. This dish can be served warm or cold as a meal prep option
  4. Add crumbled feta cheese for extra Mediterranean flavor
  5. Store leftover roasted chickpeas separately to maintain their crunch
