Dragon Fruit Shrimp Cheddar Bites

- large shrimp, peeled and deveined400g
- large dragon fruit, flesh cut into cubes1
- cheddar cheese, shredded150g
- tablespoons olive oil2
- cloves garlic, minced2
- tablespoon soy sauce1
- tablespoon honey1
- teaspoon lime juice1
- teaspoon smoked paprika1/2
- teaspoon chili flakes1/4

Preparation
How to cook.
- Pat the shrimp dry with paper towels and season with smoked paprika, salt, and pepper.
- In a small bowl, whisk together the soy sauce, honey, and lime juice to create a glaze.
- Heat olive oil in a large skillet over medium-high heat. Add the garlic and sauté for 30 seconds until fragrant.
- Add the shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque.
- Pour the soy-honey glaze over the shrimp and toss to coat evenly. Add the chili flakes and cook for another minute.
- Remove shrimp from heat and set aside.
- Place the tortillas or flatbreads on a baking sheet. Sprinkle each generously with shredded cheddar cheese.
- Broil the tortillas for 2-3 minutes until the cheese is melted and bubbly.
- Top each cheesy tortilla with the glazed shrimp and cubed dragon fruit.
- Garnish with fresh cilantro and serve immediately.
- Place garlic into the Thermomix bowl and chop for 5 seconds at speed 7.
- Add olive oil and sauté for 2 minutes at 120°C on speed 1.
- Add the shrimp, smoked paprika, salt, and pepper. Cook for 4 minutes at 120°C on reverse speed 1.
- Add soy sauce, honey, lime juice, and chili flakes. Cook for another 3 minutes at 120°C on reverse speed 1.
- Remove the shrimp mixture from the Thermomix and set aside.
- Preheat your oven broiler. Place tortillas on a baking sheet, top with shredded cheddar cheese, and broil for 2-3 minutes until cheese is melted.
- Arrange the glazed shrimp and dragon fruit cubes on top of the cheesy tortillas.
- Garnish with fresh cilantro and serve immediately.

Tips.
- Choose a ripe dragon fruit with bright pink skin and slight give when pressed for the best sweetness and texture.
- Do not overcook the shrimp — they cook very quickly and become rubbery if left too long on heat.
- For extra crunch, you can use wonton wrappers baked into cups instead of tortillas.
- Sharp or aged cheddar works best here as it provides a stronger flavor contrast to the sweet dragon fruit.
- You can substitute the tortillas with crispy tostada shells for an even crunchier base.
- Add a squeeze of fresh lime juice just before serving for a bright finishing touch.
