Autumn Butternut Squash Risotto

- butternut squash1 medium, peeled and diced
- arborio rice2 cups
- white wine1/2 cup
- vegetable broth6 cups
- onion1 medium, finely chopped
- garlic3 cloves, minced
- parmesan cheese1/2 cup, grated
- butter3 tablespoons
- olive oil2 tablespoons
- sage leaves8-10 fresh
- saltto taste
- black pepperto taste

Preparation
How to cook.
- Heat broth in a separate pot and keep warm
- In a large pan, sauté onion in olive oil until translucent
- Add butternut squash and cook for 5 minutes
- Add rice and toast for 2 minutes
- Add wine and stir until absorbed
- Add hot broth one ladle at a time, stirring constantly
- Continue adding broth until rice is creamy and al dente
- Stir in butter, parmesan, and seasonings
- Garnish with crispy sage leaves
- Add squash to bowl: 8 sec/speed 5
- Set aside squash, add onion: 5 sec/speed 5
- Add oil: 3 min/120°C/speed 1
- Add rice: 2 min/120°C/reverse/speed 1
- Add wine: 2 min/120°C/reverse/speed 1
- Add broth, squash: 16-18 min/100°C/reverse/speed 1
- Add butter, cheese: 2 min/reverse/speed 2
