Bison Steak with Blueberry Tahini Sauce

- fresh blueberries2 cups
- tahini1/3 cup
- honey2 tablespoons
- garlic3 cloves, minced
- lemon juice2 tablespoons
- olive oil3 tablespoons
- fresh thyme4 sprigs

Preparation
How to cook.
- Season bison steaks with salt and pepper
- Heat olive oil in a cast-iron skillet over high heat
- Cook steaks 4-5 minutes per side for medium-rare
- Meanwhile, in a saucepan, combine blueberries and honey
- Simmer until berries break down (about 5 minutes)
- Blend blueberry mixture with tahini, garlic, and lemon juice
- Let steaks rest for 5 minutes
- Serve with sauce and garnish with fresh thyme
- Add blueberries, honey to the bowl: 8 min/100°C/speed 2
- Add tahini, garlic, lemon juice: 30 sec/speed 4
- Keep sauce warm at 70°C
- Steaks must be cooked separately in a pan

Tips.
- Bring bison steaks to room temperature before cooking
- Don't overcook bison as it's leaner than beef
- Sauce can be made ahead and reheated
- For a thicker sauce, add 1 tbsp cornstarch
- Substitute bison with beef if unavailable
