  • fresh blueberries2 cups
  • tahini1/3 cup
  • honey2 tablespoons
  • garlic3 cloves, minced
  • lemon juice2 tablespoons

  • fresh thyme4 sprigs

Preparation

How to cook.

Prep 20 minutes Cook 15 minutes 4 servings
  1. Season bison steaks with salt and pepper
  2. Heat olive oil in a cast-iron skillet over high heat
  3. Cook steaks 4-5 minutes per side for medium-rare
  4. Meanwhile, in a saucepan, combine blueberries and honey
  5. Simmer until berries break down (about 5 minutes)
  6. Blend blueberry mixture with tahini, garlic, and lemon juice
  7. Let steaks rest for 5 minutes
  8. Serve with sauce and garnish with fresh thyme
  1. Add blueberries, honey to the bowl: 8 min/100°C/speed 2
  2. Add tahini, garlic, lemon juice: 30 sec/speed 4
  3. Keep sauce warm at 70°C
  4. Steaks must be cooked separately in a pan

Tips.

  1. Bring bison steaks to room temperature before cooking
  2. Don't overcook bison as it's leaner than beef
  3. Sauce can be made ahead and reheated
  4. For a thicker sauce, add 1 tbsp cornstarch
  5. Substitute bison with beef if unavailable
